serves 6 x 100ml moulds; 66h 10 min

Sweetness is dulled by coldness, it is why your white wine tastes cloyingly sweet if served warm, so you want the mix to be slightly sweeter than you’d think. Basil and sweet fruit go well together, you can use a sprig of mint instead if you can’t get any.

  • 400g diced watermelon flesh, large seeds removed
  • 400g strawberries
  • 10 basil leaves
  • 40g caster sugar, plus extra to tweak
  • 2 tbsps lime juice, plus extra to tweak

Prep time: 10 min Cooking time: 6h
